DORITOS LATE NIGHT Bites

The smoky flavor of chipotle peppers meets the savory goodness of ground beef and black beans in this hearty dip. The jalapeños and paprika give this cheesy concoction just the right, um, bite, to satisfy anyone, as long as they prefer solid food to, shall we say, an exclusively liquid diet. While we usually encourage experimentation, don’t get fancy by adding anything silly like garlic, or you may repel some of your most desired guests.

Ingredients:

1 – 11 1/2 ounce bag of DORITOS® brand LATE NIGHT® TACOS AT MIDNIGHT Flavored Tortilla Chips
1 jar of TOSTITOS® brand Medium Salsa Con Queso
1/2 cup chopped canned black beans
1/2 cup cooked ground beef
5 tablespoon chopped chipotles in adobo
3 tablespoon chopped jarred jalapeños
2 tablespoon chopped cilantro
2 teaspoon paprika
Hot sauce, for garnish
Cilantro sprigs, for garnish

Instructions:

Recommended Utensils: Medium mixing bowl, medium sauce pan, 1-quart ceramic serving bowl, large serving platter

Pour TOSTITOS® Salsa Con Queso into a medium mixing bowl. Add the remaining ingredients, except chips. Stir the mixture vigorously for 1 minute. Place the mixture into a medium sauce pan and heat the mixture for about 5 minutes over low to medium heat, stirring often. Once the mixture is heated through remove it from the pan and place it in a ceramic serving bowl. Place bowl on serving platter, and surround bowl with chips. Garnish dip with a spicy hot sauce heart and a couple of sprigs of cilantro and serve immediately.

Bacon Explosion

 The other day the guys from BaconToday.com contacted me in search for some barbecue bacon recipes.  Of course I have plenty of great uses for bacon in a barbecue pit, but the longer I thought about it, the more I wanted to step it up a notch and clog a few arteries for those guys.  Behold, BACON EXPLOSION!!!  Here’s what you’ll need…

Ingredients:

2 pounds thick cut bacon
2 pounds Italian sausage
1 jar of your favorite barbeque sauce
1 jar of your favorite barbeque rub

Maple-Beer-Chili Chicken Wings

Do you really have to know more than that name to know that you’re definitely making these for the Super Bowl? Sweet and spicy. Crisp and tender. Beer. These wings have got it all.

Ingredients:

1 cup pure maple syrup
1/2 cup dark beer, preferably porter
1/4 cup unsalted butter
1/4 cup ketchup
2 tablespoons grainy mustard
3 tablespoons chili powder
3 to 3 1/2 pounds chicken wings, tips removed (about 15 to 17)
canola oil
